
The Oyster Co-op
We're investing in an oyster co-op just west of our docks on Barnegat Bay. Our goal is to bring back the bayman lifestyle to Long Beach Island while cleaning up the bay at the same time.
A single oyster filters up to 50 gallons of water per day. By cultivating oysters right here in Barnegat Bay, we're not just sourcing the freshest possible product for our raw bar, we're actively restoring the water quality and ecosystem that makes LBI what it is.

Parker's Oyster
Our signature oyster is cultivated right here in Barnegat Bay. Pulled fresh from the water and landed directly at our dock, they make their way to our raw bar the same day. You can't get any fresher than that.
The Parker's Oyster carries the briny, clean character of Barnegat Bay, a true expression of the local waters that have defined Long Beach Island for generations.
The Mission
Bringing Back the Bayman
Long Beach Island was built by baymen, watermen who knew every tide, every channel, every mood of Barnegat Bay. That way of life has faded, but we believe it's worth bringing back.
The co-op is our commitment to that legacy. It's about more than oysters. It's about stewardship of the bay, supporting local watermen, and making sure future generations can enjoy these waters the same way we do.

From Bay to Bar
Every oyster that comes through our raw bar is hand-selected for quality. When Parker's Oysters are in season, they're the first thing we put on ice — because there's nothing better than what's coming out of our own backyard.
